Recipe: South Beach Oatmeal Pancakes

South Beach Oatmeal Pancakes
Yields two servings

Ingredients:
1/2 cup steel cut oats
4 egg whites or 2 eggs, beaten
1/4 cup low fat cottage cheese or ricotta cheese
1 tsp vanilla extract, generous
cinnamon
sugar

Method:
1. Combine all ingredients. 
2. Heat a drop of olive oil in a skillet over medium heat. 
3. Spoon batter into the pan (about 3 tbsp each pancake). 
4. Cook until both sides lightly browned and middle of the pancake has some resistance/is bouncy to the touch. 
5. Serve with fresh fruit.

Recipe: Perfect Popcorn

Perfect Popcorn
Yields popcorn for two people

Ingredients:
3 tbsp canola oil
1/3 cup popcorn kernels
salt and butter to taste

Method:
1. Place the oil and 3 popcorn kernels in a medium saucepan over medium high heat with saucepan covered.
2. When the kernels pop, add the remaining kernels.
3. Cover and remove from heat.
4. Count to 30 seconds.
5. Return the saucepan to the heat.  Gently shake the pan to prevent burning and keep lid slightly ajar to let steam out.
6. Remove from heat when popping slows to several seconds between pops.
7. Salt to taste.

Recipe: Ginger Sesame Chicken

Ginger Sesame Chicken
Yields 4 chicken breasts

Ingredients:
4 large chicken breasts
2 tbsp grated ginger
2 tbsp brown sugar or honey
2 tbsp soy sauce
1 tbsp olive oil
1 tsp sesame oil
garnish sesame seeds

Method:
1. Preheat oven to 230 degrees Celsius or 450 degrees Fahrenheit.
2. Line a baking sheet with tin foil.
3. Combine ginger, brown sugar, soy sauce, olive oil, and sesame oil.
4. Coat chicken breasts with mixture and lay on the baking sheet.
5. Bake in the oven for 25 (small chicken breasts) to 35 (large chicken breasts) minutes.
6. After taking them out of the oven, garnish with sesame seeds.  Let rest for 10 minutes.
